Will 7-Zip Portable work if running on a USB flash drive?

Yes,

that is the whole reason that it is called portable, because it is designed to run from a USB drive without leaving any traces on the host PC. See here for more information.

The reason that I asked was that in the description it says "read-only" devices and USB flash drives are not read-only.

ALSO

It *ALSO* supports running from CD (read-only). In addition to USB flash drives, iPods, portable hard drives, local hard drives, network shares, Zip disks, etc.

Making self extracting files?

I like the interface of 7Zip but i couldn't see if it made self extracting files - i assume not. I found making self-extracting files useful with 995zip but it would appear others don't.

Thanks - sorry i didn't noticed that. I'm just discovering this great world of 'portability'. As a teacher using different machines often it is fantastic. Firefox with all my saved bookmarks is the #1 on my list followed by OO.
