I have not found anything about that with the search function so I'm asking here now.
Is there any way to choose which apps we want in the suite before to download it ?

If you use the Pre-Release, you will download just the Platform. Then you can go to "Manage Apps" -> "Get More Apps".

Download the current Pre-Release and you can build your own suite. You use the built-in Portable App Directory and tick off all the apps you want and it will download and install them for you:

Actually I did not find the app Directory.... ? Where is it ? Where can I download it ?
I downloaded the Pre-Release from this page https://portableapps.com/download though.

It's in the platform itself. Just click Manage Apps - Get More Apps. It'll download and do it all for you.
