Assuming you're talking about bzflag.org, the game and server both appear to be portable as is. Just copy the files over to your flash drive and you're good to go.
it leaves stuff behind
although BZFlag runs portably, it does leave behind a My Documents\My BZFlag files folder (or some name like that). Not that I don't know how to delete a folder, but BZ doesn't follow Portable App standards exactly.
