FileZilla is already portable, check the applications on this site.
Trillian works perfectly portably but you have to get the U3 version and extract it.
This would require installing it on a U3 drive first, then copying the .u3p file, rename it to .zip extract it and copy the necessary files.
WinAmp also works portably but haven't completely tested to see about registry settings and such. Just google winamp on usb stick and you will find instructions.
