Mozilla Firefox Update Options?

Would it be possible to somehow show both iterations of the 32 and 64bit builds of firefox when an user does an update, possibly in the form of a check box. So they can determine if they even want the 64bit version. I recently updated Firefox portable, and the 64bit version seems to be not responsive as its 32bit counterpart. And I'm running this on Windows 10 x64. So I took the liberty of removing the 64bit directory once again, as this isn't the first time I've had issues with the 64bit version of Firefox.

Temporarily

You have it temporarily. It will be removed sometime within the next 326 days as Firefox joins other browser makers in dropping the old Netscape-style plugins.

Chrome as well?

Does this apply to chrome as well, as with chrome I don't have to edit any config files as I would have to do in firefox.

Different, Plugins Already Dead

Google Chrome Portable is still 32-bit only. A 64-bit only version is available as a test version. Google recommends their 64-bit version over their 32-bit as they say it is more stable in their testing. Note that 32 vs 64 doesn't matter in your case. Google dropped plugins from both versions last year. Java, PDF, etc are all dead on Chrome. No configuration setting will change this.

I think Firefox is still 32-bit by default for local installs. I've found the 64-bit a tad less stable, but that's lessened with each version. I've had no issues with 44.0/44.0.1 so far and run 64-bit on my main box. Firefox 64-bit has never supported plugins as a stable version. Firefox 32-bit drops them sometime this year. You can force Firefox Portable to use 32-bit until then, but at that point your plugins won't work on Firefox at all no matter what.

I'd recommend transitioning to something besides your plugin as all the mainstream browsers have either dropped or will drop support. Only secondary browsers will support plugins from then on and most plugin developers are dropping support this year as well (Oracle already announced it for Java).
