First of all i need to say you really have something uniq here, Portableapps is really an awsome application. You guys have done a really good job! Hat of to you.
Here is a list of a few OS apps that would be an nice implementation into PortableApps.

If you search the forums here I think you can find Scribus and Inkscape. Paint.Net I'm not to sure about since .Net isn't really portable.

Paint.Net requires .NET (which is not portable). And it includes closed source bits, so it's not a truly open source app.

second of all, Scribus has been done in the forums by one of the developers and is available here. Note: it is a little outdated.
Inkscape Portable on the other hand, is actively maintained by a forum member. Its available here.
Also, a lot of these things can be found through the search box in the upper right hand corner of any page here.
