I have made my Portable App using:
Universal Extractor
WinRar
using the SFX
so im just wondering how i can change the icon

Is there an .jpg or .ico file that comes in the app? Why don't you just change that image with the icon you want and rename your icon to match the name of the original?
If you are using winrar the advanced sfx options should have a tab relating to icons

The PortableApps.com Launchers perform several integrity checks before running (security reasons) and ResHacking the icon will break the security check.

Then yeah, you'll (Post-starter) have to do it via the advanced SFX options, I'm pretty sure it's in there somewhere. If not, maybe try to do it with NSIS.
