Does the launcher do anything other than display a splash screen and open the app's exe? Just wondering if I can create a shortcut to the exe and use that instead, or if I'm missing any benefit. Thanks.

The launcher is what actually makes the app portable. It takes care of cleaning up/backing up files/registry settings the app uses. So yes, it does a lot more than just displaying a splash screen (which you can disable if you want) and no, just creating a shortcut to the app itself won't work. Well, not portably anyway.
