If you have programming skillz you're itching to use, why not create a 2.0 Theme Builder for Dummies application. I'm sure the hoards of portable lay-men and women out there would appreciate that. (I'm told theming is simple but it will never be simple enough for everybody.)
Otherwise, I don't know. The team could always use help portabilizing and updating existing portable applications.
What I was thinking was doing some porting of some apps, but I'm not really sure I can port anything that isn't already ported in some way or another.

Testing is always important, making sure apps in development are behaving as expected and truly portable. The more apps get tested the more likely they are to become official.
