firefox seems to store stuff at "C:\Documents and Settings\[myUserName]\Application Data\Mozilla"
is that suppose to happen ? should any portable app store stuff under my "Application Data" folder ?
these are the folder there:

C:\Documents and Settings\[myUserName]\Application Data\Mozilla\Extensions
C:\Documents and Settings\[myUserName]\Application Data\Mozilla\Extensions-BackupByFirefoxPortable
yes, while FirefoxPortable is running. they should disappear when you close FirefoxPortable, unless you have Firefox installed, in which case it will revert to the local settings.

and now I see a lot of other portable apps have folders there.
I had no apps open at the time of checking.
you will find this and that folder there, but if you use the portable apps as designed, then when you close it , the contents of the folders are deleted, in some cases the folders itself remain.
Nobody said that portable apps do not write anything to local disk, but they do not leave personal information behind if closed properly.

They don't leave anything behind in APPDATA when closed properly. By things left behind, we mean things like prefetch or recently run EXE information that is stored by Windows and can't be deleted except by an admin.
If there is stuff left there, likely it crashed at some point. This is often caused by shutting down Windows without closing apps (which crashes them).
Sometimes, the impossible can become possible, if you're awesome!
