I use a Mac at home, but a PC at work. Could a program such as Thunderbird be put on a usb drive in both PC and Mac versions, but share the same data? In otherwords, be able to access my email from a portable app on any type of computer.

there is a site with portable tbird for mac - you could install them both and change ini files to look at same data

for basic applications like firefox it should be possible. mayB i'll give it a try
at least for w32 and linux at firefox
there should be a way to share enough data to make both looking and acting the same
and even using the same data to stay in sync. while the executables are native.
