It was sort of great to try an email client, but I got tired of folders that didn't sync with my hotmail account very well, and the two addons for threaded view and an system tray notification which seemed to wreck the experience.
Can someone please recommend a good portable email client?
All I need it to do is to thread emails that I use in the email Inbox with the sent message inbox so I can see threaded email conversations all on one page, and the ability to check for new emails as often as 1 minute AND play a sound when it comes in AND provide some sort of persistent visual indicator, preferably in the sys tray so that I know that new emails have come in.

I'm not sure how good Hotmail or it's more recent incarnations are at IMAP, does that seem to have been the problem?
The reason there aren't dozens of alternatives around is because TB is so good and so easily and effectively extendable.

I gave it a second chance, and although not perfect, it's better. Thankfully with the Portable experience, starting over is as easy as deleting the whole folder.
My biggest gripe though is the memory usage. Any way to drop that form 200mb?
Thunderbird is going to be a bit memory-hungry as it's a full-blown web browser within. It has the full Gecko engine, the same one running in the current Firefox ESR release. And the UI is all rendered using XUL (IIRC, anyway), so you're really looking at a browser window as you use the whole thing. As such, it's going to be a bit more memory hungry than a native app. Extensions will add a bit to that, too. Mine usually hovers a bit below 150MB, even with Lightning, Provider for Google Calendarm gContactSync, LookOut, and a couple others installed.

I've got 17 add-ons and I'm around 130MB so I agree with John that an add-on check is worthwhile. It may be that you have one "nice-to-have-but-rarely-used" that is gobbling loads. Simplest (and probably best) way to check is just to unload / restart / repeat until you spot a culprit(s)

I don't seem to have a lot of addons, but I've turned off a ton of plugins.
Looks like it's taken it down to 125mb which is a bit more acceptable.
I have 3 (MS Office * 2 + Shockwave Flash) and they are all Never Activate / Disabled.
