I was wondering if there was a way to create subfolders in the menu just like there are in the Windows start menu--so I could have a pop-out folder of "Internet" with Gaim and Firefox for example. Thanks

...but what you can do is to rename the PortableApps menu items in order to group them logically within the menu list, e.g:
Internet - Firefox 1.0.8
Internet - Firefox 1.5.0.7
Internet - Firefox 2.0.0.1
Internet - Gaim
Internet - Miranada
Media - VLC Media Player Portable
Utility - 7-Zip Portable

Having added several apps to my menu, I would like to see an option to categorise them (I envisage horizontal category-named bars which expand down to show a subcategory, with more than one expandable at a time (click again to retract)). This way you could always see your office & internet apps, fitting nicely in the launcher, but access security, imaging etc., when needed.
This could be customisable via Options, where it would also be nice to have an option to rename apps easily - if you use Camtasia Portable you have 4 .exes with the same name (3 with the same icon, 2 are less necessary but we should not need to delete apps to simplify things).
Pop-out menus could be annoying too, since they would always require that extra bit of interaction.
There are surely other things on the cards to improve the launcher, let's hope the accommodation of large app collections is a high priority
