we are using the Firefox portable version 52.2.0. We aim to disable the update because we want to keep working on this same version(52.2.0). So,we have removed the executable "updater.exe" . Could this solution impacts the fonctionallity of the portable version?

You should switch to Firefox Portable ESR 52.x. It will remain on 52 and continue receiving security updates through the May/June timeframe. You should not use 52.2.0 as it has known security issues.
To switch and keep your profile, rename your FirefoxPortable directory to FirefoxPortableESR and then either run the PortableApps.com Platform's built-in updater which will get you the latest ESR version or manually download the current Firefox Portable ESR release and install over your current install as usual.

We use well a portable version ESR (ESR 52.2.0). Our aim is to keep always the same version and block the differents types of updates (manual and automatic). For this reason, we thought to remove the executable "updater.exe".
After the removing of the latter, we made attempts to update manually and we success to block the update of our version to the next version ESR.
I wanted to know if this solution impacts the fonctionnality of this ESR portable version.

Firefox 52.2.0 is completely insecure at this point as it has well known critical security vulnerabilities. Head to this page: https://www.mozilla.org/en-US/security/known-vulnerabilities/firefox-esr/
You can click the links post 52.2.0 to see the security fixes. There are 8 critical security fixes implemented after the release of 52.2.0. Critical means " Vulnerability can be used to run attacker code and install software, requiring no user interaction beyond normal browsing. " In short, someone can take over your machine and install malware, install spam utilities, encrypt the whole drive and lock your files, etc.
Firefox ESR is meant to be kept up to date. It will remain on 52 through the May/June timeframe next year. The the .x releases are for security updates and major bug fixes only. Nothing will be added that will break your extensions. That's the entire point of ESR.
