Why hasn't Thunderbird portable updated to 78?
Neither the portable nor local versions of Thunderbird are automatically updating to 78 yet as it is not yet capable of handling those upgrades.
That notification likely applies to 68.10.0 and earlier. 68.11.0 was released two days later. So, it's likely incorrect stating that it requires 78.0.1 to fix it.
Mozilla is maintaining both until 78.x is ready to handle upgrades.

I rely on Portableapps to keep my portable software up to date and i was surprised by this situation.
It also detected a vulnerability with Skype, but the version it said had vulnerabilities was older than the one i have with Portableapps.
Versions after 68 had portability issues for which we needed time to work out a solution. Those portability issues are now fixed, but Thunderbird 78 introduces some major breaking changes to their extension ecosystem, so we are not pushing it out as an update yet, but have 78 up as a test release.
If you don't use extensions you can get the test release here.
I don't use as many extensions on Thunderbird as i used to have on Firefox, but i still like the functionalities those extensions give me, so i'll wait to see what happens.
I hope Mozilla doesn't break Thunderbird as much as they did Firefox. I was forced to switch to Vivaldi and lost a lot of data, customizations and functionalities in the process.
Why do all browsers have to look and work like Chrome?
If i wanted Chrome, i would use Chrome.
I miss being able to customize the GUI to my liking.
