I'm using Windows 11 and a Samsung Odyssey G9.
When I open the PortableApps menu in my system tray, the menu opens up hard up against the left hand side of the screen.
Any ideas?

When you say it opens hard left, do you mean when you first run it? Or do you mean you're repositioning it, hiding to the tray, then when you show it again it moves to the left?
The expected behavior is when it's already running and hidden/shown, it shouldn't move around. When you close it, it figures out which of 9 positions it is in. Top Left. Top Center, Top Right, Middle Left, etc. It stores that position and when you launch again should launch in that position.

I click the button in my taskbar and it appears on the other side of the screen.
When I use this on other machines, or before I had this monitor, it'd appear just above the icon where I clicked.
Re-read your reply, went hunting in the inis.
Closing, then setting the following two options in PortableAppsMenu.ini did the trick:
StartPositionHorizontal=Right
StartPositionVertical=Bottom

Ah, yes, you can manually set that. You can also click and drag the menu to your preferred position while it's running and it'll remember within the context of the nine positions I outlined above. I you move your cursor to the top of the platform's menu near the search box but not within it, you should see the mouse pointer change to a 'move' pointer (cross with arrows on all four points). You can then hold down the mouse button to move it.
