I have a few exe portable apps I would like to run would these work through double clicking and opening the exe after I’ve installed Wine on Linux Mint??

Our Platform and our portable bits run on Wine, but compatibility of the base apps (or if you mean apps not from here) is not really something we can say.
The best place to find Wine compatibility details about any app is through Wine's app database.
