i was lookin for some key logging software that would run off ny data stick
and save to my data stick

Key presses or characters? I'm not sure that a character logger should be posted here, since the majority are used for nefarious purposes ('M not implying anything, your's may be more altrusic.) If you're looking for a key press logger, though, this one may suit:

Countkey v2.00
It graphs the usage of your keyboard and mouse.

i was look for software to change keys for example the @ key for the " key

I think Autohotkey can change the layout of your keyboard and much much more.
