Is anyone aware of a Firefox plug-in that will change how Firefox identifies itself (and its version) to the network/websites? Some organizations forbid FF from being used and scan the outbound traffic for the Firefox header info.

Here 2 to get you started:
Quick Preference button
https://addons.mozilla.org/en-US/firefox/addon/1851
FireSomething
https://addons.mozilla.org/en-US/firefox/addon/31
each does more than your asking for however.
I sure there's something simpler out there.

{edit:
If you want down and dirty:
Go to
about:config
change
general.useragent.extra.firefox Firefox/2.0.0.12
to
general.useragent.extra.firefox Mozilla/4.0 (compatible; MSIE 6.0; windows nt 5.1)
for IE 6
I don't know any other settings off hand
Things have got to get better, they can't get worse, or can they?
It's easier to just use the User Agent Switcher:

Much easier,
I just don't have that in my "tool kit" as I have the other two which do multitasking

John,
Look at this review of the Add-On:
Almost Useless
by Infinity on January 28, 2008 (rated 3)
It is extremely irritating to have to switch the UA over and over and over again.
User Agent Switcher does not retain its settings between browser restarts (at least not on Ubuntu) and it doesn't work on a per domain / per site basis.
Don't you just hate people sometimes?
Gimme, gimme, gimme
"It washes my dishes, but it doesn't dry them, so it sucks"
Aren't you glad we don't have people like that here

You'd be amazed how many emails I've gotten that say that over the years. I try to focus on the other ones where people say thank you and talk about how it's helped them live their lives, keep in touch with people, travel, etc.
I think "It washes my dishes, but it doesn't dry them, so it sucks" is pretty much the perfect summary of the mindset, though
