after updating to 3.01 from a 2.xx some addons are disabled and their items are completely grayed out in the add-ons menu.
How can I install these and be rid of them? the uninstall buttons are grayed out along with everything else.

What's the addon name?
If the uninstall button and menu item are disabled, the add-on is locked. To uninstall a locked add-on, you'll first have to unlock it via Safe Mode.

One of them actually seems to have disappeared..????
The other is RealPlayer Browser Record Plugin 1.0 Is there a FF 3 update for this do you know? I cant even remember what it does!!
+ how do I "unlock" in safe mode? I can run safe mode OK but the add-on shows up just as before with no indication of how to unlock it...

In your question you asked about Addons, not Plugins,
They are not the same.

AddOns = Themes + Extensions + Plugins in the Firefox 3 interface.
We should ask folks to clarify if they say AddOns.
Sometimes, the impossible can become possible, if you're awesome!
Are you saying then that my original instruction should have worked and that my follow up is incorrect?
Personally I don't like way Mozilla flips in naming things,
"Extentions, and Addons and plugins, Oh My!"
and I don't even want to talk about themes
