I'm noticing 0.7 Sunbird creates a directory as follows:
C:\Documents and Settings\%username%\Application Data\Mozilla\
C:\Documents and Settings\%username%\Application Data\Mozilla\Sunbird
I can delete these directories but the do get recreated.
Can anyone else confirm this? If so what can be done to remove this?

Just to clarify, is the directory there after you have exited from Sunbird Portable, or just while it is running?
Usually things like that get cleaned up by the launcher. If they aren't, it's a bug to be reported.

It's created when it launched and it doesn't go away when you exit.
I have the same problem.
But I checked the Launcher and it says "RMDir "$APPDATA\Mozilla\Sunbird\""
but it doesnt...
