A beta is a test version that should be nearly feature complete but has known bugs and is expected to have other bugs that people should find.
A release candidate is something that should be release-worthy but is being posted for a final test. If, say, Firefox 3 Release Candidate 1 is judged worthy, it's released as final. If it isn't, they do another RC.

The whole point of a beta is to shake out all the bugs. Many commercial companies don't do enough beta testing and are left with major bugs in their releases... which is why it's usually recommended to avoid any .0 release (1.0, 2.0, 3.0, etc).
At the moment, 5 are planned followed by the release candidates. Beta 4 feels a little buggier than beta 3 to me.

I had to update Vista before Firefox 3 beta4 worked for me (what is strange as the nightlies were working fine).
I think that both the beta 4 and the nightlies have small glitches (mostly on the app visual), but they work fine.
Considering that beta's 3 and 4 were noticeably buggy, I would hope at least a few more beta's.
They both have problems with yahoo mail as well as a few webapps I use at work that work perfectly in 2.0.0.12

Is the Update issue finally fixed?
Because people like to try out the betas and this allows them to do so without impacting a local instance of Firefox.
And, no, the update issue is still out there, but it's on Mozilla's radar and I've discussed it with them because it impacts Firefox Portable users (which account for about 1% of Firefox downloads each month).
