Or is all activity within PortableThunderbird stored inside its own folder?

All your emails, passwords, contacts etc. are stored in its folder
and it shouldn't write any files anywhere else
That's unfortunately not the full truth. Apps in PA-Format may write to the hard disk. But they will leave nothing behind, when you close them, because such files are deleted on exit.
Please, truthseeker, don't ask for every app separately. There are more than 40 of them (still counting)! I've given you the answer in general Hope that helps ...
What happens if my power goes out and my laptop shuts down before Thunderbird is closed properly. Where would someone be able to find my thunderbird data then?
Data Should still be in the data folder. Most of the apps here with settings typically created on a local hard disk are redirected in some way, not copied back and forth off the disk. In the case of the registry, John's latest techniques should remove registry entries from the portable app even if you do have a crash of some sort.
