what is the difference between the mozilla sunbird ".zip" (sunbird-0.x.en-US.win32.zip) release (which appears to be portable) and the sunbird portableapp?

The ZIP version isn't portable at all. It's portable in that you can run it from a flash drive without needing to install it (most software falls under this definition) but it leaves all its settings on the local PC (most software falls under this, too).
Sometimes, the impossible can become possible, if you're awesome!
