I think it would be cool if there was an option to subscribe to forum posts, I know there are drupal modules out there which allow this, what does everyone think?

To be able to opt in to receive emails when a thread is commented in would be good. Another idea might be another RSS feed for recent posts?

The best two of which I'm aware are Comment RSS and Watcher.
Comment RSS - straightforward, but you need an RSS reader and basic technical skills to work out what do do.
Watcher - probably not practical for a site this big - traffic will be increased far too much. The user watches a post, it emails them. It's installed at BPBible.com.
For me, I normally just use my personal tracker, which tracks posts which I have commented on.
