I seem to remember upgrading an app was as easy as installing over the top. However I cannot seem to locate the resource listing how to go about this exactly?

There is no need for a resource for it - just do it. Install to the same location and it'll upgrade it.

Lets say you have your GoogleChromePortable folder in X:\PortableApps so the whole path is X:\PortableApps\GoogleChromePortable where X is your drive letter.
Download and run the GoogleChromePortable installer and select that exact same path (although it should do it by itself) and install it.
In short, just install it to the same place you had your old installation and your upgrade is complete!
