Is there a way to run Firefox and Private browsing together without defeating its purpose of being private?

You can with separate profiles, a secondary installation of Firefox Portable and setting AllowMultipleInstances to true, but it will not be fully portable and leave things behind on each PC. Keep in mind that Private Browsing simply launches your existing Firefox Portable with a specialized profile and settings and that Firefox itself can't run with two separate profiles at the same time.
Sometimes, the impossible can become possible, if you're awesome!
