maybe I can help out for once, since this is also a passion of mine
A smart guy has written a set of batchfiles, to use Xten on the stick. It's a completely automated process, which basically writes the reg-settings from your stick to the registry, waits until Xten has ended, and then writes the original settings back. So you leave no traces ...
For IAX, look out for a prog called idefisk - works from my stick, but I have read somewhere that it leaves some traces behind.
And a new star on the sky is zoiper, although I haven't tested it yet for portability. Still beta, and the free version has a time limit (which pisses me off). But: it can both - SIP and IAX! Will keep watching it, but would be interested in your opinions re: portability: http://www.zoiper.com/
I would love to have a portable usb sip softphone to connect to my asterisk server wherever I go or at any computer I am at.

Download it here:
for Xlite: http://www.ip-phone-forum.de/downloads.php?do=file&id=137
for XPro: http://www.ip-phone-forum.de/downloads.php?do=file&id=135
Then, you could also user phonerlite, which is portable by design (for SIP): http://www.phonerlite.de/index_en.htm

Always on the move - love all portable apps!
I'm now using Phonerlite with my Voicestick setup without incident... awesome recommendation.
