When you start an app it shows up on the taskbar - what determines that icon which is displayed there? Is it the app or the launcher?
And can it be changed?

That comes directly from the app itself.
The only way to change it is to either recompile the base app with a different icon, or hack the resources which is not something I'm well versed in. Others may have a bit more knowledge on the topic.
