Not sure if this is the right place for this; if not, please let me know which is the right place.
Why is Bonjour included as an app displayed in the PortableApps menu? What is it for? I think this is new behaviour - or have I inadvertently changed some option somewhere to make it appear (which option, where please)?
We have no such app included by default. You must have added it, possibly by copying in a non-PortableApps.com Format app. If you hover over it, the menu will tell you exactly where it is. If it's bundled in a non-PAF app that needs it and you don't want it in the menu, you can right-click and hide it.
Sometimes, the impossible can become possible, if you're awesome!
Thank you. Your tip about hovering over it gave me all the information I needed. It turns out that Bonjour is used by Ascendo's DataVault which I have installed as if it were part of my PortabeApps system.

Turns out Bonjour is used by one of the applications (DataVault) in my PortableApps setup.
