I too would love to see a portable version of Jitsi
vf2nsr, I don't know if you are aware of this work but a fellow portableapps.com community member has done some work portalizing jitsi. Perhaps his work can shed new light onto bringing jitsi closer to an official PortableApps.com release.

I did take a look at that post as well as some testing on my own and at this time I can/will not be developing it as it is a bit more in depth than I can handle perhaps one of the other members will take a shot at it
