Hi,
Is it possible to automatically run an application when you exit/close the PortableApps menu?
What I would like to do is to automatically dismount a TrueCrypt drive when I close the menu, either using the eject button or the close button at the bottom of the menu.

No, But you can use a script to Kill Portable apps, (still unsure if safe), dismount TC, and then Eject the drive all in one go.
