When I have shown list of all apps in menu there is not possible to scroll between them so I cannot select app which is not shown in the list. When I have list shown by categories it is possible to scroll apps. Is it how it should be?

If you go to the options button and then the advanced tab, check if "Disable Scrollbar" is marked or "Screen-Reader Friendly...". Both of these might affect the scrolling.
The default view shows your favorites up top followed by your most used apps. It's analagous to the Windows Start menu which shows your pinned apps then your most used. Neither let you see all your apps, just favorites and most used. In All Apps view, you see all your apps. You can adjust what views you want within Options.
