I would like to suggest the packaging of Scilab. It´s a high quality open source project meant to produce a software like Matlab and Simulink.

I looked into building this one a while back, ended up being a real pain in the ass. Finally decided that I wasn't gonna use it anyway so it wasn't worth the trouble.
