how can i change the icons on the right hand side
i.e
documents

pictures
videos
explore
as well as have the downloads folder icon appear at the top right instead of just being a black square?

The black square isn't a shortcut to the downloads folder - it is a space for a personal picture - clicking it opens a file dialog to select the image you want there.
ok but how do i put a picture in it and change where the file goes to?
You can't change where it points - it is not a shortcut, it is a standard file open dialog like clicking File->Open in most programs.
To put a picture there just click the box, browse to and select a 48px by 48px image (bmp, jpg and png are supported) and click Open.
