I would like to change the names of the Music, Pictures, Video folders. Is there a way to do that so the changes show up in the Suite Menu?
Also can I add folders to that menu?

You did... there's a PortableApps Menu forum (I've moved your post).
The ability to rename the icons, change the icons and direct them to different directories will come in a later release. There won't be an option to add more than the current 4, though.

p.s. I un-installed U3 on all my families USBs and replaced it with PortableApps. This is a great addition to the work you have already done.

About renaming, I had an idea:
But using the newest (Beta)-Version of the menu, you could rename the text displayed in the menu. But instead of renaming it to another language, you rename it to whatever you want.
