I have a portable application I would like to add to the menu
The whole of the program (.exe and dependencies are ine one single folder)

I am blocked with the installer of portable apps menu Sad

What is the procedure to add any portable exe in the menu ?

I was using pstart formerly and a simple right click on the menu onpened a context menu with add file ...

How and Where?

In what way are you being blocked?
Without PAM running you should just put the whole directory in the same directory as PAM:

H:\PortableApps\
H:\PortableApps\PortableAppsMenu
H:\PortableApps\ResHack
H:\PortableApps\WhatEver
H:\PortableApps\YOUR-APPLICATION-DIRECTORY

When you start PAM it shoud find the .exe you have in :
H:\PortableApps\YOUR-APPLICATION-DIRECTORY

Please give some details about what seems to be going wrong?

Search the forums for more info.
