If you want to hide them in the menu, hover your cursor over the app in the menu, right click it and select hide. Then right click, select show hidden icons, to show the ones you have hidden. Do the same again and uncheck hidden icons to hide them again.

other question please, how can I crypte or hide the dossier containing the portableapps and their portable logiciel in their portable apps.

The password idea has been tossed around here before (try search) but the program most mentioned at that time, Truecrypt, now spun off as Veracrypt requires admin priviledges and possibly a driver. Though it wouldn't be an issue on your home computer, you couldn't use it on a public p.c. If security is utmost, check out the Carbide flashdrive offered here. It has hardware encryption and is a tough little device. I own one and highly recommend it.
