The LibreOffice Still version is a separate channel, specifically meant to not upgrade to the latest.
You need to install the normal channel if you want to keep it updated as new versions are released.
LibreOffice has 2 releases available at any time. At this time, 5.0.5 is the "Still" version, whereas 5.1.0 is the "Fresh" version. For more details on the release cycle, see here: https://wiki.documentfoundation.org/ReleasePlan
Although this different release plans appear somewhat confusing at first moment, but it answered my question sufficient. This means that in week 9 is published LO ver5.1.1 and in week 18 is published LO ver5.0.6. Maybe I can use LO ver5.1.1 then again, since it is not currently possible to use the version LO ver5.1.0 on my computer.
