Tor, Multibit (or other trusted wallet), VeraCrypt

Would love to see more privacy related apps such as those listed in the subject line.

use Tor website

Tor should be used only from the Tor website. There are very frequent changes to all the software they produce and only they can follow really what changes are needed. The Tor Browser is a portable Firefox, but number of things being implemented so people can not use it with some plugins etc.
Using Tor products from other sites should be avoided.

As far as Veracrypt (~Truecrypt) , this can not be really portable at all as drivers are needed. Using it without drivers just in the so called portable mode is not very efficient, basically you can use encrypted zip file as well in such case.

As Otto said "use encrypted zip file" and 7-zip portable handles that quite well.

0.5.17 seems to work perfectly, but newest version has some tweeks for smoother use.
