I've stumbled upon past discussions about making Hugin, a tool to stitch panoramas, portable here at PortableApps.com.
Would someone take the challenge to make it portable?

I second this request. it would be great to have hugin portable!
There've been several Development versions of Hugin Portable around, and they all show up when you use the search box at the top of the page to search PortableApps.com for "Hugin".
Within the first few results are both of the following:
