An "off-grid" version of Windows 7 that can be used forever inside other OSes

Background:

A year ago, I switched to Android (from iPhone). I have very high productivity needs, and don't do social media. I installed all the apps I needed, and then switched off all updates.

The result? Life changing.

Pros: My phone behaves predictably. The UI never changes. My friends and colleagues keep complaining about how after updating this or that app the buttons changed, or free features became "paid-only", or the phone slowed down, or the app keeps crashing. Not for me. Everything works exactly as it used to a year ago.

Cons: I don't get new security updates nor new features.

Verdict: I couldn't be happier, and couldn't care less about the new features. As regards security, I use my phone carefully enough that I think I can do without new updates (I could be wrong about this, but that's what I currently think). I was completely sick of the update treadmill where I was constantly updating and having to re-learn how to use apps.

Having had the above experience with my phone, I'm now turning my attention to Windows 7. I love Windows 7, and don't care for Cortana and the ads in future versions of Windows.

Off-Grid Windows: Here's what I want to do: I want to take a legal new copy of Window 7, and virtualize it (say with VirtualBox), and install all my favorite portable apps into it. And then use this "off-grid". That is, I won't necessarily use it to browse the internet because it might be missing critical security updates, but use it for my portable apps etc. And I want to be able to use it inside Linux or a newer version of Windows (via a virtual machine such as VirtualBox).

Thoughts?
