I don't know if such a thing exists, but would it be possible to produce some kind of portable note taking software?

Other options are Advanced Diary or EssentialPIM (use Google)

it leaves some registry keys behind, I tried this with the beta, so just use EssentialPIM unless Evernote Portable is out of beta versions.
SO far it seems to work fine, but thanks for the precaution anyways.

I know of three more applications that you might check out: NeoMem, The Guide, and MemPad.

I'll let you examine them yourself. However, MemPad is freeware while the other two are open-source. Also, I suspect that The Guide is portable, but I am not 100% certain. (Try the version of The Guide without the installer.)
