A portable file browser like explorer++ or Xenon File Manager that opens documents\files\images using the portable app on your usb drive, instead of using the default windows programs.
Is there anyway to do this?

It's not the easiest thing to setup and the program doesn't appear to be seeing active updates, but muCommander supports native, portable file associations: https://github.com/mucommander/mucommander/wiki/Custom-Commands
MultiCommander also has a feature that will let you customize what program Views, Edits, or Launches. See Configuration - File Type Setup.
