I've heard that Firefox Portable is not really secure as far as passwords, email, etc. Any input on this?

Well, anyone who has your memory stick can access your passwords, unless you set a "master password" for them. Nothing is anywhere apart from your stick, so as long as you have it, its fine!
What about encryption, as far as others on the internet being able to see what your doing?
It's the same as always. If you hit an SSL site, it's encrypted. If not, it isn't. The only way to prevent that is to use a proxy. But those are often blocked. Not to mention very slow.
