It seems to work when disabling 64-bit version in EverythingPortable.ini:
ProgramExecutable=Everything\Everything.exe
;ProgramExecutable64=Everything\Everything64.exe
That would be ok but maybe there is a smarter solution?!
App FreeCommander:

When starting via PortableApps the Right-Click-Menu on Files/Folder does not work. Right-Click-Menu works fine when using a stand alone portable FreeCommander.
Any idea how to solve this?!
I think Windows on ARM only supports 32-bit apps properly (and even then, some apps won't work in emulation) and 64-bit was only released for general availability a month ago (so even more apps will fail). But I have not kept up with it. Windows 11 ARM dev test builds on Mac are completely unsupported and Microsoft is unlikely to officially release them, so you're essentially in uncharted territory that's not supported by Microsoft, Apple, or us. I can not even troubleshoot this issue as I don't have access to an M1 Mac.

I'll find some workaround for now.
At least those apps run at all on that new Windows.
I added an M1 Mac Mini and a Windows ARM laptop to our Amazon wishlist, which I just added to the Donate page. If we happen to get one, I may get some ARM bug testing done.
