Is there a way, similar to Softpedia, of adding apps to some sort of watchlist and being informed by email when the apps have been updated?

The automated way to get apps is via the PA.c Platform which will detect out of date apps and let you know when they need updates. We don't offer any sort of email notifications for new releases. We have an RSS feed but that would be for all standard releases except mid-major version beta/dev but not let you select individual apps so it wouldn't suit your needs.
