I hesitaed for a long time to start using the PortableApps platform, although I have used portable apps for a good number of years, but the platform eventually conviced me, so now I just love it!
I have e number of email ccounts/profiles, one personal and one for a club I manage. Can I have multiple instances of the PortableApps platform - of course on diferent drives - so to keep my accounts end emails better organized?

About the platform: Yes. You can group together your accounts in one email client.
PS. By default, some apps do not allow multiple instances.
