Anyone know if is there a way to increase the number of visible apps in the main menu of PortableApps?

Not at present. I've added it to our list of possible features as it's been requested a few times: https://portableapps.com/node/28593
Another option is to right-click the icon in the system tray on the right (not the normal taskbar icon) as that'll bring up a cascading set of menus by category, showing more apps at a time.
You can also use the find as you type search as soon as the menu comes up which makes finding apps fast.
Sometimes, the impossible can become possible, if you're awesome!
