I'm currently building this using Hibbiki's build. I'm debating using macchrome's unGoogled build, but it's only updated once a month which could leave folks vulnerable to security issues. Ungoogled Chromium's could also be an option but these often lag behind official releases.
Known Issues: Your extensions, extension settings, pinned tabs, and passwords will be lost when you move PCs just as with Google Chrome Portable. This functionality is built into Chrome/Chromium itself by design of the developers. It happens with Chrome, official Chromium nightlies, Hibbiki's Chromium, macchrome's unGoogled Chromium, or Ungoogled Chromium's builds.

does this/can this check for updates, and then autoupdate the portable installation?
Same as any other portable app here - via the PA.c platform. Some don't break for a while when using internal autoupdater like most mozilla apps but that is just a rather coincidental functionality that may work or may break with any update until the launcher is adapted to changes.
I would prefer Ungoogled Chromium. But regardless of build, are extensions & other settings portable (see https://portableapps.com/node/42637)?
Whether you're using Chrome, official Chromium nightlies, Hibbiki's Chromium, macchrome's unGoogled Chromium, or Ungoogled Chromium's build, you will lose all your extensions and all extension settings on every move between PCs even if it's the same path on both. This also happens with the slightly less portable chrlauncher linked from woolyss's site. I tested all of these to be sure moving between clean Win 10 and Win 11 virtual machines.
Chrome/Chromium itself is purposely built this way.

If you have Windows lower than version 10, you must use Supermium Portable https://portableapps.com/apps/internet/supermium-portable.
This is normal. Chrome/Chromium and all non-modified variants are Windows 10 and up. Firefox Stable, Edge, Opera, etc, too. The ones that run on earlier Windows releases have to be modified to work. And the modifications will get more involved and messier as time goes on.
